    I toned it down a lot from what would tickle my palate. The chicken was not particularly spicy. The sauce had a nice mild burn on the back end. Most salsa is hotter. I cut the hot stuff down to about 25% of what the recipe called for.

            Yeah but Zatarain’s makes an easy lime cilantro rice.

            However I would like the recipe as I have a jar of three Peruvian pepper pastes to use.

                      Good point. I'm making progress. She liked this. Similar to the other stuff, but more saucy.

                          I didn't sleep well last night because I was so hungry. I am considering a bit of protein before sleep rather than strict 36 hour fasts. Sleep is too important to sacrifice.

                          Education is extremely important.

                                  Cooking this now. The key to flavor is the reduction. It always takes longer than they say it will.

                                  The smell is fantastic.
