Peruvian chicken first effort

Boneless skinless breast. Looks pretty damn good for that cut. The green sauce is delicious.
I just happened to open the perfect wine for it - a Washington state Rhone blend of Viognier, Roussanne and Muscadelle. Looked online for recommendations and there it was. Serendipity.

I toned it down a lot from what would tickle my palate. The chicken was not particularly spicy. The sauce had a nice mild burn on the back end. Most salsa is hotter. I cut the hot stuff down to about 25% of what the recipe called for.

Yeah but Zatarain’s makes an easy lime cilantro rice.

We probably need a schedule so we do not torment you. I'm kind of mean but not cruel.
I didn't sleep well last night because I was so hungry. I am considering a bit of protein before sleep rather than strict 36 hour fasts. Sleep is too important to sacrifice.
