I’ve given anesthesia for probably hundreds of total knee replacements. The number of skinny people who have had this operation I can count on the fingers of one hand. However, it was not unusual to see normal sized people having hip replacements.

By the way, I made the stock the day before. After making the roux yesterday, and adding the stock, it was "OK," but needed a little something more. So I did two things: I threw in a splash of rum (!) for some sweetness For more umami, I slowly added "Better than Bouillon" - ended up being about a teaspoon. That really worked well.

Here's a New York City story. There are certain people when they were out on the street, or standing somewhere that--in a crowd when you just randomly passed by, a light just SHOWN upon them. Harrison Ford was like that, on the other hand Paul Newman was just a short Jewish guy, Tom Curise has that, same with Tony Bennett. The best ever was Bill Clinton.
