If this is the "what's for dinner" thread, today I used my Traeger pellet smoker to smoke a steak. Pleased, very, with the results. No sear, but awesome flavor. Took about 20 minutes on the highest temp, which was a reported and probably optimistic 475. I used hickory wood pellets, which made it reminiscent of bacon. Next time I'll use mesquite.
I think the sear is overrated in importance. Have you ever smoked a rack of lamb? Scrumptious.

It is soooo much better smoked.
