    At Paladar 511 the other night I had a life-changing tuna crudo with shaved fennel, orange, pistachios and avocado. One of the best things ever eaten. Going to try to recreate it, starting with this recipe.

        I've never been into raw fish. I'm sure it could be great, just seems counterintuitive to eat.

            Never heard of it, but it looks good. How many calories are on that plate? 200?

              About that. Maybe 300 with the pistachios. But not very much. They have a cumin-lime vinaigrette with it I need to look into.

                Usually I find the European (and Mediterranean) treatment to raw fish often over-marinate with citrus juices, to the point where the sourness of the citrus juices overwhelms the raw fish's natural taste. As far as raw fish goes, more frequently than not, I prefer sashimi to crudo or carpaccio.

                        Turned out pretty well. The taste is spot on. I marinated the tuna a bit so it wasn’t as bright red. Won’t do that next time. The combination of fruits, vegetables, nuts fish and dressing is great.

                          when I hear the word crudo, I immediately think of one of the tastiest meats known to man, Prosciutto crudo. My first taste was while stationed in Naples, Italy. That and fresh mozzarella di bufala were the two foods that are today on the top of my list.! ham.jpg

                            Love them both. The buffala is a little harder to find. I still remember when it was illegal to import prosciutto and my delight when that changed in the 80's.

                            My best friend was stationed in Naples. Met his wife to be there. Man, can Daniella cook.
