Pan seared and roasted a ribeye Berkshire pork chop tonight. I deliberately did not brine it to see what it was by itself. It was excellent. Very tender, very flavorful pork
So far so good. I would buy it again. Definitely much better quality than Costco.

I just used a little olive oil. 3 minutes per side at medium high, maybe just a bit lower, then 6-10 minutes at 375. I like them about 150.

We had the aged New York Strip steaks tonight. We did a head to head competition with our favorite local beef supplier.
First, the Wild Fork steaks were half the price of the local steaks. Wow.
$8.00/lb vs 16.50/lb
They were seasoned and prepared exactly the same in the same pan.
Salt, Pepper, touch of onion and garlic, Mayo seared and baked at 375 for 10-12 minutes.They were both incredible pieces of meat. I might give a slightly more tender award to the local steak but it was so close that I kept going back to the fact, that the Wild Fork steaks were half the price.
We also prepared the Wild Fork Steak Fries in a shallow pan of olive oil. Wow. Incredible flavor from a spud. We didn't even salt them.
Wild Fork is here to stay for us.
