      She doesn't mention my current favourite - cooked in bacon fat, along with the bacon. It doesn't look great, but it tastes wonderful.

      I used to do the basting method.

        My late aunt taught me the fat and tablespoon of water method fifty years ago. Don’t use fat anymore just a dollop of olive oil, medium heat, let the eggs set up add the water and cover. Works every time.

          Mrs. George prefers scrambled, but, when I make fried eggs, I'll definitely try this method. I have some bacon fat in the refrigerator...that might be ideal.

          Sort of related.

          The best way to reheat pizza is to use a non-stick skillet over medium heat. After a few minutes, drop about half a teaspoon into the pan (not on the pizza) and immediately cover. The steam restores moisture to the pizza, helps get the cheese gooey while the pre-cook keeps the crust crispy.

            Thanks George - I've been using the air-fryer with modest success - but I'm always looking for a better way.

              I am fine with my bacon grease or butter. The edges getting crispy and brown are a feature, not a bug.

                Wow that sounds great. I’ll give the 10/10 method a try soon, too. I normally either do the water/steam method or I do 1 min on an (already very hot) skillet then flip and reduce heat to low for a few min.

                For better or worse I’m not a picky eater. There are few foods and styles that I won’t consume.

                That being said, if I ever did win powerball or something… I’d live a very normal life but I’d absolutely higher a full time chef.
