My daughter is 5, when would you recommend starting piano lessons?

That's pretty old for a beginner, but don't let her get discouraged.

      Education is extremely important.

          I think mine was 7.

Assuming normal or average development, 5 years is old enough to start piano lessons, no problem.

              My granddaughter?

And then...I had to swap piano teachers. I went from the computers and digital keyboards to full Old Skool... One-on-one, acoustic piano, damn the chords and learn the notes.

Been doing this since June and I can already see the improvement.

5 sounds about right. You’ll know soon enough whether there’s sufficient or sustainable interest to continue with music.

The right teacher may be even more important than age.
