        It is a wired one. I’m not convinced of the longevity of wireless probes at 400F. The wires are kind of a pain but I’m used to it.

            Also I would avoid ThermPro products. The ones I’ve had have been unreliable.

            Mik, are the probes wireless? I’ve tried using the probes in a slow cook on the grill, but they always wind up coming into contact with a hot surface that blows the lead.

              Yes, that's the one. The One version (more $) is faster but I find 2 to 3 seconds completely acceptable.

                  BTW, I have a NIST certified thermometer. I think a new one is between $500-$600.

                    I use a thermapen too.

                    They’ll end up, after a lot of drama, with the same formula they use every time they have a trifecta: take away health care and food assistance from low income families and use the money to fund tax cuts for their donors.

                      I made steak last night. Convinced me to get a new thermometer.

                      Overcooked it a bit (thermometer was inaccurate), but it sure is pretty....

                          It was gorgeous - just overcooked. It came out medium, maybe even a bit beyond that. Thermometer inserted into the side of the steak said 120, and I set it to rest at that time.

                                    If you're getting really concerned about accuracy I'd be tempted to experiment with a thermocouple reader - that way the sensors (thermocouples) are really cheap to replace, the expensive bit would be the reader, which is going to last for ages. The trick is you can then keep the electronics well away from the heat, which is going to improve longevity.
