I've been disappointed with my stainless. I'm sure it's a matter of lousy technique, but food sticks and it's difficult to clean. Keeps scorching.
I've switched to some Avalon Advanced nonstick for my skillets, and they have been wonderful.

You’ve just encapsulated the problems in a nutshell…
They stain easily, are hard to clean (especially at the rivets with the handle) and are already looking FAR worse than the Uber cheap set that Karla and I bought when we got married (20 years ago) and gave to Lucas for his dorm/apartment last year when we bought these.

Yeah, people say "Use Barkeeper's Friend." Not worth the hassle.

Shit works though.
There are some things I cook - sautéed carrots or haricots vertes - that scorch the pan. Barkeepers friend cleans it right up.
Been thinking of getting an Avalon nonstick skillet for those items.

I’ve been using Henkel Granitium skillets for probably ten years now. On my second set, but good nonstick and excellent cooking. They’re safe for metal utensils, but I seldom use them anyway.
