              What temperature do you all sous-vide your steaks to?

              I like it pretty rare, but wife is a medium/ medium-rare type person, so we compromise.

                Mine was 122. I leave room for the internal temperature to rise on the grill. If I'm using a stove, that's not much of a concern but if I'm taking the time to use the mesquite grill I like to leave them on there for 4 minutes per side. These cap steaks are difficult to overcook anyway. I think all the marbling helps the meat not go grey and tough, even if you cook them to what should be medium or more. An identically thick NY strip will be way overcooked if I cook them the same as these cap steaks.

                    Today is my 48th birthday. We went to Costco on Sunday and got a tres leches cake and some prime ribeye cap steaks, which were no more expensive than normal, surprisingly. I may mesquite grill them or maybe just pan sear them. Sous vide first either way.

                    For my TNCR birthday present, I want Jolly to start posting again.
