Happy birthday, Horace.
My birthday is December 7. I'll be 42 years young.

Happy Birthday, Horace - sounds like a good plan. Hope you enjoy your day.

I've never had a birthday of mine that I didn't enjoy. It's always fun for me.

One birthday in my 20s I forgot about until mid-afternoon. I was in college working on something in the computer lab when it dawned on me that it was my birthday. Ironically, that time I forgot about my birthday is probably the most memorable birthday experience I ever had.

Happy Birthday, H.
Those steaks look bloody good.

Growing old is no joke. The older you get, the bigger the steaks.

Happy Birthday, Horace!
Wow. From your posts I thought you were so much older or younger! -

My goal is to make it to an age where people think my pathological childishness is cute.

What temperature do you all sous-vide your steaks to?
I like it pretty rare, but wife is a medium/ medium-rare type person, so we compromise.
And happy birthday Horace.

Mine was 122. I leave room for the internal temperature to rise on the grill. If I'm using a stove, that's not much of a concern but if I'm taking the time to use the mesquite grill I like to leave them on there for 4 minutes per side. These cap steaks are difficult to overcook anyway. I think all the marbling helps the meat not go grey and tough, even if you cook them to what should be medium or more. An identically thick NY strip will be way overcooked if I cook them the same as these cap steaks.

Good plan, man. Happy Birthday.
As they say, if you get to 50 and you haven't grown up, you don't have to.

Today is my 48th birthday. We went to Costco on Sunday and got a tres leches cake and some prime ribeye cap steaks, which were no more expensive than normal, surprisingly. I may mesquite grill them or maybe just pan sear them. Sous vide first either way.
For my TNCR birthday present, I want Jolly to start posting again.
