The tail meat is best. Be very meticulous in not allowing any gator fat on the meat to get into whatever you are cooking. Gator fat is mighty bitter. Also, gator doesn't have a lot of taste, so season accordingly. You can fry it (most common), make a sauce piquante with it or I've even seen sausage(it's mixed with pork).
