Stupid, indeed. But I for one haven't met a roadie like that yet. Dura Ace buys you less weight, but for a lot of money. Quality-wise it isn't better than 105 or Ultegra.

I keep the valve converter caps on only because I might find myself in need of gas station air, which only has shrader valves.

Took it out this morning on a 12-mile tooling around. Everything's working fine. Brakes now have a ton more stopping power. It's weird, though. The new coaster cog is LOUD when coasting. When I pedal, though, no noise whatsoever.
Fixie lockring is bent somehow. Gotta get a new one but not in a rush, still works fine.

Really? Here, they're in jars beside every bike shop's till, they're ubiquitous.

Well, I do know that valve converters exist, but I've never seen them in the form of a cap.
Also, I'm not sure about the situation when such a converter would be useful on the road. The compressed air at gas stations usually has a too low pressure for road bike tires. I also always carry a minipump (that said, it's a PITA to get a tire up to 8 bar or so with a mini pump).

That's true of modern gas stations here I think, too, but at older ones, they don't throttle your pressure. And I've been stranded while way out there before, it sucks.
I use CO2 because I'm edgy like that. I've gotten good at not freezing my hand off!
