      I use three brands of knives...

      Cutco. Simply great knives.

      Chicago Cutlery. Got a couple of old chef's knives that I really like.

      Old Hickory. I've had four or five of those for forty years. They take more care, but they are easy to get a good edge.

      For sharpening, I use these:

            About 2 years ago, I "invested" in a set of cheapo "Amazon Basics" knives - it was cheap ($70) and I thought, "Well, when this wears out, I'll just buy another cheapo set."

            It's served me pretty well, but the knives are no longer holding an edge, and despite my efforts at honing, using a "sharpener," they're just not (ahem) cutting it any more.

            So, I'm going to "upgrade" to another cheapo cutlery set. The way I figure, I can spend $400 (or more) for some really, really, good knives and keep them forever, or I can invest $70 for some functional knives and pitch them after two years. After 5 cycles, I'm probably breaking even (probably better, when you consider the costs of professional resharpening). And, after another 5 two-year cycles, I'll be at the age where I really don't care.

            THoughts?

            I'd say it depends on whether you clean your knives in the dishwasher or by hand.

            If it is the dishwasher, I'd definitely go with the cheapo set. Knives look terrible after a few years of dishwasher. If you clean by hand, then I'd go with the expensive knives - but learn how to sharpen them!

            I'm a big fan of knifes that are not stainless steel. Yes, they look ugly and rusty after a while, but their big upside is that they can be made razor-sharp again in a few seconds.

                        @Jolly we do, with our peeling knifes. We use cheap ones that we renew once a year or so.

                                      Some folks are better than others. Some steel is better to work with than others.

                                      Years ago, we were hunting in Canada and we noticed all the guides carried Shrade Sharpfingers. Those used to be (Chinese steel nowadays) great knives. They weren't stainless, so you could get a very sharp edge on them pretty fast, but they had enough carbon in them that they didn't dull by the third cut, either.

                                      Can't find knives like that anymore.
