I use three brands of knives...
Cutco. Simply great knives.
Chicago Cutlery. Got a couple of old chef's knives that I really like.
Old Hickory. I've had four or five of those for forty years. They take more care, but they are easy to get a good edge.
For sharpening, I use these:

I just go with the Amazon Basic - good enough for me, and when I can't sharpen them any more, I pitch 'em.

I'd say it depends on whether you clean your knives in the dishwasher or by hand.
If it is the dishwasher, I'd definitely go with the cheapo set. Knives look terrible after a few years of dishwasher. If you clean by hand, then I'd go with the expensive knives - but learn how to sharpen them!
I'm a big fan of knifes that are not stainless steel. Yes, they look ugly and rusty after a while, but their big upside is that they can be made razor-sharp again in a few seconds.

I subcontracted that out to my father in law when he visited. He did a wonderful job.
