Tonight's Dinner: Lasagna

    Ingredients:

    1 pound ground beef
    2 tablespoons vegetable oil
    1 (28-ounce) can whole tomatoes, coarsely chopped
    2 (6 ounce) cans tomato paste
    2 teaspoons salt
    1 teaspoon Italian seasoning
    1/4 teaspoon Pepper
    1/4 teaspoon crushed red pepper
    1/8 teaspoon garlic powder
    1 (8 ounce) package lasagna noodles
    1 cup shredded mozzarella cheese
    1 cup ricotta or small curd cottage cheese
    1/4 cup grated Parmesan cheese
    3 to 4 slices mozzarella cheese, halved diagonally

    Directions Instructions
    Step 1: Brown ground beef in oil in a large skillet, stirring to crumble; drain off pan drippings. Stir tomatoes, tomato paste, and seasonings into meat. Bring to a boil; reduce heat and simmer 40 minutes, stirring occasionally.

    Step 2: Cook noodles according to package directions; drain.

    Step 3: Place half of noodles in a lightly greased 12 x 8x 2-inch baking dish, slightly overlapping lengthwise edges. Spoon one-third of meat mixture over noodles; add half of shredded mozzarella, ricotta, and Parmesan cheese. Repeat layers, and spoon on remaining meat mixture. Arrange mozzarella slices on top. Bake at 350 for 30 minutes.

    Thoughts:

    Well, it's definitely not "extra easy." Not any easier than any other lasagna I've made.

    Chop up an onion and cook it with the ground beef (I did).

    Add some scallions (I did).

    The Italian seasoning is not nearly enough. Double it - or more (I did).

    The garlic salt is not nearly enough. Double it - or more (I did).

    Add cilantro (I did).

    More red pepper would be OK too, but I didn't want to over-spice it for The Management.

    That said, it was pretty good. Mrs. George approves (an important consideration). This is A LOT of food. We will easily get 3 meals out of this recipe.

      If I were to make it again, and I probably will, I'd mix 50/50 Italian sausage (mild) with the ground beef, just for a little extra flavor.

            As I told The Management, the "sauce" for the lasagna would be great for a spaghetti meal. No fussing around with the cheeses, lasagna noodles, etc.

            This is something to remember next time I want to make spaghetti.

            I was skeptical about the "whole tomatoes", and I'm glad I didn't drain them after I chopped them up. I was also skeptical about using 12 oz of tomato paste.

            It was quite tasty.

                George, do the roasted grape tomato recipe I posted a while back. Awesome sauce and very easy.

                    I use no-boil noodles.

                      I use normal noodles but don't pre-boil them either. Just add a little more water to the sauce and put it in the oven a little longer.
