The problem with buying ribs from Costco? You have 3 racks to cook… So I have three racks smoking right now, 2 racks going to the guys at work tomorrow…

We’re also going to have drip pan roasted cauliflower and Brussels sprouts…

You can buy ribs from other places that are not Costco.

As for dinner here tonight, most likely honey BBQ roast pork, stir fried vermicelli with vegetables, rice cake.

True, but after the license fee they pay to Costco for its patent on pigs, it’s always cheaper to buy from Costco.

It should be lamb at Easter, no question . Sadly I think we’re having chicken.

          I was only joking

Prawns and grilled salmon with sautéed leeks and buerre Blanc. It was spectacular.

True. I prefer to buy 3 racks from costco and immediately throw away 2 of them into the trash. It's cheaper, plus it keeps the garbage workers employed.

I made salmon with a mango-coconut marinade, and roasted asparagus with lemon and Parmesan.

But it wasn’t Easter dinner for me. It was just dinner.
