    Trying to recreate a dish I had in my fave Italian place the other night - Malloredus Alla Sarda. I'll use guanciale and hot Italian sausage instead of the salt cured in the recipe as that is what Rodi's used. It was arguably the most perfect pasta dish I ever tasted.

      That sounds wonderful, and not very difficult. It's a perfect Sunday evening meal. I don't want to spend hours in the kitchen on Sunday evening.

        Turned out really well, but next time I will make a light tomato sauce instead of diced. Still, very close to what I was trying to do. Yum.
