As you know, Mrs. George is not a fan of spicy, interesting foods.
For years and years, I would buy something called "cream sausage" at our local grocer. Totally not spicy. It's about ¾" in diameter, and it came in a coil.
We've always enjoyed it, with some Dijon mustard for dipping.
I'm always looking for a mild sausage that she might like. My likes, as usual, don't matter.

Like I said, I don't cook a fresh sausage gravy. I work with a Mayeaux (maiden name Villmarette) who does a really good job...The gravy is a very dark brown. Hard to do without burning.
