The recipe is from a creole cook that worked tugboats in New Orleans. My uncle would get shipped out with him a lot, and eventually got the recipe from him. It's pretty much the best recipe my family has.

Tugboat work can be tough, especially in terms of schedule. When you're gone, you're gone. Good food helps, but it's a job guys don't always stick with, even making pretty decent money.
