The recipe is from a creole cook that worked tugboats in New Orleans. My uncle would get shipped out with him a lot, and eventually got the recipe from him. It's pretty much the best recipe my family has.

Definitely creole. They have a love affair with tomatoes. Looks mighty good.
Tugboat work can be tough, especially in terms of schedule. When you're gone, you're gone. Good food helps, but it's a job guys don't always stick with, even making pretty decent money.

Yeah, my uncle did it for quite awhile. Became a mate before he retired from it.
