We have a stainless steel one. Great for a lot of things, but I worry the stainless steel changes the flavor….

Right?? I spent the past weekend with my in-laws. They don't have a temperature-controlled kettle, which was only one entry in a long list of disappointments, but I did indeed miss ours.
