Like pulled pork?

Just discovered that an Instant Pot makes very good pulled pork. I had a 6.5 lb pork shoulder and no time to smoke or braise it, so I decided to try it in the instant pot. Made two batches - one with carnitas seasoning and one with al pastor. The first batch is done and shredded.
Truth is that while I miss the smoke flavor, the texture of the meat is much leaner. The fat is not all rendered and so is more easily separable from the meat.
You just cut it into maybe one pound chunks, sear it then pour in your liquid seasoning and pressure cook it on high for an hour. Let the pressure release naturally. Really good.

We use the instant pot for many things - but not this. I should try it for my braised chuck tacos.
What I'm worried about is getting the right amount of liquid reduction. Things in the instant point tend to stay liquidy.
I like it when braised meats turn into a bit of thicker sauce by the end.

We do the same (kinda)... we make pulled chicken in the InstaPot. Add a bunch of salsa, chicken breasts, then after a few hours, mix (shred) it with an electronic mixer (normally used when baking). Keeps things easy...
