My guess:
Anti-vax conspiracy theorists create a bad look for Trumpists + Fauci sucks = let's blame Fauci for the anti-vax stuff. We get to hate the person we already hate anyway and we get our tribe off the hook.
There's also the feeling that he made Trump look stupid at the Covid briefings, which is completely untrue.

That would plug into the "Fauci sucks" part of the equation.

...annnnnnd that's how we got Fauci. His being a lying bastard or not isn't the point. He filled a communication gap that the entire country perceived from the administration, that's why so many started listening to him.
Ironically, it's a nearly identical environment that allowed Trump to be elected in the first place (the "he tells it like it is" horseshit), but conservatives refuse to see the similarities for some reason.

- I didn't walk it back to science generally because I've come to accept the fact that emerging science is not a concept Americans are capable of ingesting. I would refer you to basically every discussion on global warming ever.

I think Fauci's mostly a mouthpiece, and I think that's probably how he views himself, too, but I don't think he's so Machiavellian that his position in the news cycle determines what he believes. Mostly because he would never get away with being that ridiculous.

People who don’t get vaccinated die in numbers so much greater than vaccinated that all conversations are ridiculous.
It’s dreadfully boring the excuses. Move on and stop listening to the bloggers and podcasters that are in fact endangering you and your loved ones lives.
Or be a skeptic, take matters into your own hands and accept the consequences one way or another.

Science is adapting to the coronavirus a hell of a lot faster than society is adapting to social media. That's really the problem.
