For me, grilled, then seasoned and placed in a damp warmer. I've sold a few thousand that way. Most of those were Bryan Jumbo.
A hot dog is now a rare event around my house, but nowadays it's Nathan's. Usually boiled or grilled, with homemade chili and sweet yellow onions.

There's a restaurant on Magazine St. in New Orleans called Dat Dog. A really amazing place.
Pick your sausage (anything from traditional hot dog, kielbasa, 'gater, to a Fosters bratwurst).
Pick your bun - steamed? Toasted?
Pick your toppings - the list has about 20 to choose from.It was at Dat Dog that I discovered the joy of a bratwurst on a toasted bun, with grilled onions, and blue cheese. When I make brats at home, that's how I have mine - with some Dijon mustard. Looking at that menu makes me think I should try a brat with sauerkraut next time I make them.

Beer-boiled or GTFO.

I am torn about beer boiled since you lose a good beer out of it.
If I'm having a Chicago Style Dog (my newest obsession), then it's best grilled. Something about the way the celery salt interacts with the smoky flavor.
If it's a Chili-Cheese dog, then it needs to be beer boiled.
If it's going to be a kraut dog, then it needs to be in a slowcooker with the sauerkraut for several hours.

Well, you don't use the whole thing. Small diameter pot, just enough to cover the dogs. I leave the lid off so that it boils off some, too.

@George-K what type of peppers go on a Chicago dog?
