Making this rather interesting Instant Pot recipe. It adds chocolate and sweet potatoes...weird. Using some crummy flank steak I bought a lot of by mistake at Gordon's Food Service.

They say to use the Chili/Beans setting but I think I'm going to go maybe 45 minutes on high pressure. This flank steak is pretty tough and I'd like it to fall apart some.
Will put in some masa at the end too. Adds a nice corn flavor.

Turned out delicious, if a bit soupy. Surprising given that I only added 2 cups of beef stock for 2.5 lbs of meat.
Now gussying up some Jiffy corn muffin mix with some sour cream, honey and corn. Should be great with the chili.

I like chili just about any way or style. It's all good. I put some masa in it to thicken it up a bit. Adds a nice Texas flavor too.

While I am at it, does anybody use Jiffy cornbread mix and gussy it up? I like to add corn, sour cream and honey to mine to make it more moist and interesting. There's a website with ideas.

OK, I cooked it down substantially today and added chipotle pepper and more cumin. Now tastes more like chili and less like beef stew.
