Wow… That was a revelation… Maple Syrup

Just got back from taking Finley sled riding. I made him a cup of cocoa. Since Karla’s gone 80% crunchy, that means using pure cocoa powder and typically a little honey or other natural sweetener…
On a lark, I tried using maple syrup instead of honey. Good lord, that was the greatest cocoa/hot chocolate that I’ve ever tasted. Finley downed 2 mugs…

There's an eternal divide in this house between maple syrup and honey. I'm on the maple syrup side for almost everything, except for sweeteners in brines for chicken, where I prefer honey.

That's what we use. However, in winter we'll often have a hot chocolate with salted caramel syrup and whipped cream. All sugar free, I might add.

Yes, I use honey for my lime marinade for fajitas. I don’t think maple syrup would work well with that… Though I am considering it as part of a coffee rib sauce..

Maple syrup also works well in an Old Fashioned in place of simple syrup.

I just add the whipped cream. I like unsweetened bitter chocolate. Don’t have much of a sweet tooth. Never have.
