I had one chicken breast left over from a package of frozen I'd gotten at Walmart.
I made chicken schnitzel last week using these breasts, and though mine was OK, Mrs. George complained that hers was "tough" and "chewy."
Thinking I had nothing to lose, and 1 small breast is not worth saving, I made a batch of cajun chicken alfredo. I've posted the recipe before.
Some observations:
- My cajun chicken alfredo is better than what I got at Red Lobster last time.
- If you buy pre-peeled garlic from Spice world and refrigerate after opening it will still grow mold.
- Never buy frozen chicken breasts from Walmart. "Tough" and "chewy" indeed.

All my garlic now comes from Wild Fork, Dorot frozen. Hear stuff.
