    I had one chicken breast left over from a package of frozen I'd gotten at Walmart.

    I made chicken schnitzel last week using these breasts, and though mine was OK, Mrs. George complained that hers was "tough" and "chewy."

    Thinking I had nothing to lose, and 1 small breast is not worth saving, I made a batch of cajun chicken alfredo. I've posted the recipe before.

    Some observations:

    1. My cajun chicken alfredo is better than what I got at Red Lobster last time.
    2. If you buy pre-peeled garlic from Spice world and refrigerate after opening it will still grow mold.
    3. Never buy frozen chicken breasts from Walmart. "Tough" and "chewy" indeed.

      Sounds good just the same.

      HEB around here doesn't sell any frozen meat. I got some strip steaks there two days ago and they are fantastic. Having one today for lunch.

      Education is extremely important.

        All my garlic now comes from Wild Fork, Dorot frozen. Hear stuff.

          The frozen packs are tough. Better to freeze fresh, if possible.
