@LuFins-Dad Jewish. Her paternal Ashkenazi grandparents emigrated from Lithuania to Mexico City in the 1920s. Her maternal Sephardic grandparents emigrated there from Sofia, Bulgaria, in the early 1940s to escape the Holocaust.
although maybe way back there was some Aztec or Mayan ancestors who emigrated to Eastern Europe.

More likely there’s a little Sephardic Jew in her heritage, and her real issue with the Spanish was the expulsion and the inquisition

More importantly, Texas, New Mexico, California, Nevada, Utah and Arizona should be returned to Mexico. The current inhabitants should be moved to a small strip of land adjacent to Texas where they can be housed in refugee camps. It's worked so well elsewhere, so definitely worth a try.
