      Illinois is known for an open-faced sandwich called the Horseshoe, made with thick-sliced toasted bread, your choice of meat, and topped with french fries and a secret cheese sauce.

      Not only have I not seen one, I've never even HEARD of this.

            Maryland's is well-deserved.

            My home town is about as far away from the Chesapeake Bay that Maryland allows. It's not even in the Bay watershed. The rivers, lakes and streams there are not connected to it in any way.

            And still just about every restaurant offers crabcake sandwiches because that's what the tourons expect when they're in Maryland. Most of the time, the crabs used aren't even from there.
