Crispy braised chicken thighs with lemons, olives and garlic (lots of onion too). Used my favorite, Castelvetrano olives. They taste really buttery after time in the oven. WiIl serve with crusty french rolls to dip the sauce with and fresh local asparagus. A rose' from the Rhone will go nicely with this.

Bohemian "Cream Sausage" - a mild sausage simmered in beer for about an hour, and then browned in a skillet. Mated with Crash Hot Potatoes, Sauerkraut (with bacon, of course), Dijon mustard, steamed broccoli.
And (cheap) Scotch.

It's a pretty healthy dish overall. No dairy fat, and I poured the chicken fat off after crisping the thighs skin down, so it only has a little olive oil otherwise.
