    In our case, boiling the carcasses today. Gumbo tonight.

        Roasting the carcasses (in the roasting pan so as to baste the carcasses with the turkey goo) beforehand greatly improves the flavor of whatever you're making with them.

            In other slightly different cooking techniques, last night my nephew brought a big wood duck gumbo. He makes his stock with duck feet.

            Was good.

                  I’ll have a day or two of leftovers then make this Turkey noodle soup which is fabulous and freezes very well.

                    Making a broth from the carcass for Karla and the dog.

                    I think the meat (and part of the broth) will go into a pot pie.

                      With my spouse's family, there's no need to think of leftovers (22 lb bird - 7 people). They take every single piece of white meat. This year, I hid a small batch so we'd have enough for a sandwich each. Last time, the next day I cooked a second turkey so we'd have "leftovers".
