So during our trip in May, we will be visiting Universal Studios and doing a family photo session at Shutterbuttons, where they pose you in front of a green screen then the final pictures will have you in various film locations. This, I believe, gives us the opportunity for some hijinks, such as having levitating toddlers or people becoming invisible before your very eyes... My question is, do I need to match the exact shade of green as the screen, or can I just order a generic green sheet and it will work?

It all depends on the lighting. You want flat, good light with no shadows. Beyond that, the closer the match, the better.
