We've seen this already with the hipsters. They gave new life into textiles, vinyl albums, craft beers, film photography, etc. (About that last, film-only wedding photographers are becoming a thing in some circles. Because a negative is more special than a jpeg.) McDonald's took over the world, and now everybody wants to go to Elevation Burger and similar. We're going to see more of that in other disciplines, too.
I have no idea how far that reverse trend will go. Probably not enough to make a living off of for most. But "AI-free" is going to be valued more, right alongside AI's convenience.

Eh, maybe more like the new "hand-made" but basically yeah.
