OMG the best jar condiment ever

MFR and I were at Jungle Jim’s market today (look it up incredible place) and she spotted Stonewall Kitchen’s Maple Bacon Aioli. Put it on slow roasted salmon tonight. Delicious. She really does not like salmon but loved it with this.

Sounds great, I love Aioli. The first time I tried it was at a restaurant that offered a flank steak with watercress aioli dipping sauce. That was a revelation.

I have never before had a premade aioli that was any good at all. This stuff is really excellent.

Allow me to educate you, my philistine friend.
Mayonnaise is an emulsion created with egg yolk and oil.
Aioli is an emulsion created with just garlic and extra virgin olive oil. It gets its creamy consistency and pale color from emulsifying the two ingredients, with a bit of coarse salt.
