I would add the following which can be traveled by US citizens:
Thailand
14 day mandatory quarantine in ASQ (Alternative State Quarantine) hotels. Travelers must pay for this - depending on what hotel you choose, can be about USD$1500 - $3000 Includes all meals, lodging, 3 PCP tests, transport between hotel/airport, 24 hour on call nurse, etc. -

Mrs. George and I have looked into those cruises. We thought about taking the Empire Builder from Chicago to St. Paul and catching the cruise there. From there, cruising down the Mississippi to NOLA, and catching CONO back to Chicago.
They are, to be sure, pricey.
They're not showing that cruise now, but the reverse is available. They start at $15K for a 21 day cruise.
Memphis to NOLA starts at $6500.

Mexico is and has been open for travel. I just booked a week at an all inclusive resort in April in the Riviera Maya area. The resort will test us for Covid prior to us leaving back for the States. The US requires proof of a negative test to come back.

I get that. Cruises are always quoted that way.
Amtrak has an interesting way of pricing travel.
You book the "basic fare" for each person. Basically, you're booking a coach fare.
Say, two people from Chicago to New Orleans - about $150 each, for a total of $300.
Then, they add the "accommodation charge" if you're booking a sleeper. For a bedroom that's about $300. Total price $600.
Now, if I were traveling alone, I'd pay $150 basic fare and $300 for the bedroom - total $450.
