Hubby asked for a special lunch today, one his Grandma J used to make in the spring, Creamed Asparagus on Toast.
It's just asparagus in white sauce on toast. He was thrilled to have it. Next time, we'll use plain white bread for the toast, so the aspargus takes center stage. I only had oatmeal nut bread ready today. This is one of those delicately flavored comfort foods, and the asparagus really doesn't need any competition. The only seasoning is salt and freshly ground pepper. That's all it needs.
Time to bake some basic sandwich bread for him. It has nice little airy pockets to hold the white sauce for every bite. It toasts nicely, too.
Yeah, a little comfort lunch on a Tuesday here. Hubby's a happy camper.

We have eaten enormously healthily throughout this debacle. Every day Lady Phibes has prepared lots of fresh veg - peppers, tomatoes, carrots and what-not, which I then have with a bit of cheese and egg, and if I'm feeling very lucky a toasted bagel. She's primarily doing it to ensure the kids get some vegetables, but I benefit too.
It's probably a good job I've got that case of wine in the basement.

I have a difficult time saying no to hubby's requests for his childhood memory foods. So far there hasn't been anything that's so awful I can't tolerate having it in the house.
He also did the cooking while I was sick for a few weeks recently, so I kind of owe him some leniency in the menus now, at least for a while.
It's catching up time now, and I've even made some decadent treats I know he adores. Since you're avoiding that kind of thing, I won't tell you about the very fudgey dark chocolate brownies I made. I won't tell you how ridiculously good they are, so tender and moist, with that gorgeous shiny top they get. I won't tell you how perfectly they accompany a hot coffee or tea in the afternoon. You don't need to think about those things, or even know about them. It would be cruel of me to even speak about it, so I won't do that, not at all.

Lunch resembles breakfast. Every breakfast has always included strawberries, raspberries, bananas, some mini pound cake croutons and a dab of French Vanilla yogurt. Yesterday, for the first time ever...we tried frozen strawberries and raspberries. Guess what? They're great - maybe even better than fresh as sometimes fresh strawberries are pretty weak.
We have oatmeal and some kind of protein - a touch of beef or turkey bacon - and we're there.
