    Greece would be glad to take any leftover Turkey, and so would Syria.

        Turkey salad can be frozen. I'm partial to cranberry-walnut, myself.

        Turkey and sausage gumbo also keeps well frozen. In fact, it may get better.

            Or you could make turkey soup. Uninspiring, I know, but months from now after being frozen for awhile, it really hits the spot.

            Pick all the meat off the bones, break up the carcass and use it to make stock. Add a chicken bouillon cube. Discard the carcass when the stock is done, it's done its job. Strain the stock. Chop up the meat. Add a starch you like (rice is good), with vegetables and maybe beans or something, and the meat. Add seasonings like poultry seasoning (mandatory IMO). Maybe garlic powder or thyme. Maybe marjoram. Not all at once with these, taste as you go. Chill on the sage if you're using poultry seasoning.
            Freeze in individual servings.

            Good Tip: On the Day Of, save the goo from the turkey roasting pan, and roast the carcass in that before you make the stock. It greatly enhances the flavor of the stock.

            To loosen the goo, add a small bit of hot water to the roasting pan and stir it around.

              Once upon a time, when dinosaurs roamed the earth and there was a Clinton ejaculating in the Oval Orifice, our hospital dietary department received eight thousand pounds of turkeys from the Federal guvmint.

              I've had baked turkey, fried turkey nuggets, turkey pot pie, turkey gumbo, turkey ala king, turkey salad sandwiches, turkey croquettes, turkey poboys, turkey chili, turkey meat loaf, sweet & sour turkey, turkey parmesan, turkey enchiladas, turkey & spaghetti casserole...

              Our guys were so desperate, they were cutting recipes out of women's magazines and upsizing the recipes to 100 servings, then cooking in multiples. Thank God we had a really good dietician and an outstanding head cook.

              So we ate our way through 8000 pounds of turkey. Know what the Feds do when you eat 8000 pounds of turkey?

              They give you another 4000 pounds...
