The Tamale Bucket
-
Riffing off of Jon's jelllo thread.
Had a cousin of mine who was an excellent cook. In fact, after he retired from teaching high school science classes, he worked as the cook for the hunting lodge on Glasscock. He liked it because it paid well and he didn't work but a few months a year. But, I digress...
Anyway, Autrey kept an empty five quart ice cream bucket in his freezer. Any leftover meat (with the exception of fish) was rinsed off and went in the bucket. Chicken, beef, venison, pork, rabbit, whatever. When the bucket got full, he'd have a tamale party at the house.
He'd cook up the tamale meat and the corn paste. Somebody else would get the shucks ready. We'd all sit around the table and roll tamales. It's amazing how many tamales five quarts of meat can make. Into one if his two pressure cookers they'd go, with somebody else timing them.
Your pay for the night would be a good cup of coffee, a dozen tamales to take home and the fun of friends and family working around the table.
A fun way to waste not, want not.
