Red Beans and Rice

Canned no less. I had a can of Glory RB&R with some Zatarain's andouille and a little cayenne for heat. T'was not bad at all. Better than Campbell's soups for sure.
(this is mostly for Jolly since I don't think most of y'all eat red beans and rice much)

Try their chopped or mustard greens as a side dish. They're not bad.

As a side note, I have a signed copy of this book. If you like basic Louisiana cooking and want to know a lot of the history behind it, the book is very good.
I've grown some really big eggplants recently, so last night the wife did an eggplant casserole out of the book. Done with half-inch slices of fried eggplant, shredded chicken breast, trinity, tomatoes and chopped olives. It was tasty...

I'll look for it. I am much more interested in this sort of thing than fancier cooking. Most of the time anyway.
