    I'm with the wife this morning at a little farmers market down at the local Pentecostal church. She's sniffing some goat milk soaps, deciding which ones to buy and I'm making small talk with the guy in the booth, while his wife works with my wife. The conversation goes like this...

    "Is that what I think it is?", I asked.

    "Yep. Biggest beaver I've ever seen", he replied. "Thought I'd try my hand at it".

    " Well, you did a good job. The hair is silky and you ain't got no bald spots. Do you eat 'em? "

    " Been known to. Ground this one up with some beef suet and it come out good".

    I said, "Well I got a buddy that's Cherokee and he jerks the tails. Let's me have a piece or two when he has some fresh". We both agreed fresh beaver is best, as it doesn't age well.

    About that time the wife finished up and we went to the next booth for some pullets...

          I prefer little ones, and I prefer to eat them raw. But he's right... they don't age well.....

            The beef suet is a new idea. Whipped cream, strawberries, all that stuff sure. But not beef suet,
