In traditional karate styles choreographed forms (kata) such as that is called bunkai. It is quite a spectacle to watch in competition.

What is that "martial art" they do in Brasil? Not really coreagraphed, more kind of a dance between the two competitors.
They do it on street corners, etc. and eventually one guy "wins".
