    About 2 years ago, I "invested" in a set of cheapo "Amazon Basics" knives - it was cheap ($70) and I thought, "Well, when this wears out, I'll just buy another cheapo set."

    It's served me pretty well, but the knives are no longer holding an edge, and despite my efforts at honing, using a "sharpener," they're just not (ahem) cutting it any more.

    So, I'm going to "upgrade" to another cheapo cutlery set. The way I figure, I can spend $400 (or more) for some really, really, good knives and keep them forever, or I can invest $70 for some functional knives and pitch them after two years. After 5 cycles, I'm probably breaking even (probably better, when you consider the costs of professional resharpening). And, after another 5 two-year cycles, I'll be at the age where I really don't care.

    THoughts?

      Can't help. I'm only allowed to use plastic knives for some reason.

          If it's working out for you, then keep using the cheaper set. We got a set of Cutco knives for our wedding, and have been using that for the last 23 years. If we had to pay for it ourselves, we probably would have gone the cheapo way as well. The chef knife would have been different though. If I didn't like how a cheapo chef knife felt in my hand, I would have been willing to spend more money to get one that I liked.

                I have some Henkels and some Sharper Image and some Analon and some and some. Two of the knives I use most are two that MFR had when we met. One is a Chicago Cutlery wood handles 6" knife and the other is a cheap white plastic handled restaurant boning knife she got at some trade show. I use all of them, and I can tell you I see no particular advantage in the expensive knives. I just sharpen them with a Henkel pull through and it does just fine for me. I would not invest in a $400 set.

                    Completely agree with your strategy of buy cheap and replace. I use that same strategy for non-stock pans, where I think it makes even more sense.

                    Education is extremely important.

                      Funny you should mention. When I retired, the hospital gave me a gift certificate for various items I could get from a catalog they mailed me. I opted for a set of Calphalon non-stick cookware. It's been fine, but it's tarting to show it's age. I believe the retail price was about $180 or so.

                      It's been 3 years, and I'm thinking of replacing it as well.

                      $60 a year?

                      Good value if you ask me!

                                        I use three brands of knives...

                                        Cutco. Simply great knives.

                                        Chicago Cutlery. Got a couple of old chef's knives that I really like.

                                        Old Hickory. I've had four or five of those for forty years. They take more care, but they are easy to get a good edge.

                                        For sharpening, I use these:
