    Gonna smash some ground beef down for burgers.

    Most recipes call for ghee - I don't have any handy.

    What's a good alternative?

    • Canola?
    • Vegetable?
    • Bacon grease?

        Yep. Or you can clarify your own butter. I normally have a jar of ghee since it’s so handy.

              Yes...much to my shame, I've never tried it.

              In point of fact, I have fried burgers only a few times.

              I don't have a wide spatula for smashing, so I read a tip - take some non-stick foil and wrap around the bottom of a saucepan. Use that to smash the burger. Worked really well.

              The downside is a lot of spatter and a lot of smoke.

              Now… How was it?

              I have a stovetop griddle that I used and they came out really nice. Only used salt and grilled onion. Oh, a piece of cheese as well. No ketchup, mustard or anything else.
