        Holy cow (pun intended)… That was a revelation… It was as tender as you could want, and the flavor was so damn beefy. I don’t think you could have too strong of a marinade, but at the same time it would be damn good with just salt & pepper.

        The only weird thing was it went from 120 to 140 in 2 minutes, and it went another 10 degrees resting so I completely overshot medium rare and moved right into medium. I will likely pull it at 120-125 next time.

            We went to a butcher in the area. I normally buy most of our meat at Costco. I find their meat to be higher quality than grocery stores, but the selection is a little limited. We wanted to see how it compared with an actual butcher shop. I thought the difference wouldn’t be much. Unfortunately I was wrong…

                We bought the bavette steak, 2 lbs of their hamburger mix, 2 pounds of meatballs, hotdogs, and pork chops. Well over $100… but we wanted to give it a fair shot (without spending $30 per pound for their strip steaks). I fully expected to say “see? Costco’s just as good…” And in many ways they are, but the hotdogs and now the bavette steak were VERY good… they offer a butcher’s box… 6 meals for 2 people at $100. That would probably cover Karla, Fin, and I. We may try a box and get one per month…

                  Looks great. Agreed about Costco and their limited selection. Good idea to try out a butcher shop.
