I love chicken salad and will try that. Ordered the crazy salt from Amazon.

Might want to cut the recipe down a mite. 😀

The roast chicken idea is one we do, both for chicken salad and for big gumbos. Most of the time around the house, the wife makes chicken salad with chopped pecans and craisins.

What impresses me most about chicken salad is that it makes raw celery delicious.

This recipe will be a perfect use for Costco's pulled rotisserie chicken breast meat, which they sell by the bag. I wonder what they do with the skin and the dark meat.

I'm a strange critter. I like both light and dark meat in chicken salad.

Made this today as 25% size batch. It's really a mixture of egg salad and chicken salad, which is an excellent idea, since I like both. I used costco pulled rotisserie chicken meat. Turned out very delicious. I do hate peeling eggs.

You can buy pre boiled and peeled eggs. I bet HEB has them.

I didn't know that, thanks. I'll look for them next time I make this.
