Summer-weight freezer recipes anyone?

So in February and March I was pretty good about filling the freezer with ready-made meals.
It’s getting time to replenish the supply, but I’m not often in the mood for heavy stews, lasagnas, chilis, etc now that summer’s here.
Anyone have any good ideas for recipes I can make and freeze that are lighter?

Fruit and vegetable soups, especially ones that can be served cold and are not cream based. Vegan potato leek soup is a favorite, although I use chicken stock.
French mushroom soup - particularly good with a croissant or puff pastry on top.

It's not freezable but in summer I love Panzanella.

Not sure this would freeze either, but still delicious.

This would probably freeze well.
