Tonight’s dinner? Jambalaya from a customer…
Yes, those are oysters.

Bouillabaisse and fresh baguettes .
Tonight's servings of Bouillabaisse will have huge crab legs cooked in the broth with the mussels and other seafood, such as shrimp and fish. Tomorrow evening will be lobster with the same additional seafood.
The Hobart helped me mix up aout 17 pounds of French bread dough. It's done rising now, and is ready to shape, have its second rise, and then bake.
Between the baking bread and the simmering Bouillabaisse, the house will smell divine.
Happy New Years Eve!

And to you! We are having friends over. Making filet mignon (just put it in the sous vide). With garlic shrimp and bernaise sauce, asparagus and maybe a small salad of peaches with bursts and a splash of blackberry balsamic.

@Mik I'm not fond of shrimp, but my God, that looks wonderful.
Tell me about the Bernaise...

Easy peasy. McCormick Hollandaise mix with the addition of tarragon and a little onion powder. Delicious.

I've used that in the past with good results. But, you, being the gastronome that I know you are...I expected something from scratch.
I'm liking the thought of tarragon and onion powder.
Wait...are we talking bernaise or hollandaise?
